One-Pan Tilapia with Asparagus
Seasoned tilapia fillets and tender asparagus roasted together in 20 minutes — the fastest healthy weeknight dinner.
Ingredients
Serves 4
- 4 tilapia fillets (about 6 oz each)
- 1 bunch asparagus (about 1 lb), woody ends snapped off
- 3 cloves garlic, minced
- 3 tbsp olive oil, divided
- Zest and juice of 1 lemon
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Lemon slices, fresh parsley, and capers (optional) to serve
Instructions
- 1Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- 2Toss the asparagus with 1.5 tbsp olive oil, a pinch of salt, and pepper. Spread in a single layer on one half of the baking sheet.
- 3Pat the tilapia fillets completely dry with paper towels. Place skin-side down on the other half of the baking sheet, leaving space between them.
- 4In a small bowl, mix the remaining 1.5 tbsp olive oil with minced garlic, lemon zest, smoked paprika, oregano, garlic powder, and a generous pinch of salt. Spread this mixture evenly over the tops of the tilapia fillets.
- 5Roast for 12–15 minutes. Tilapia is done when it's opaque throughout and flakes easily with a fork. The asparagus should be tender with slightly charred tips. Both should be done at the same time.
- 6Squeeze fresh lemon juice over everything as soon as it comes out of the oven.
- 7Serve immediately with lemon slices, fresh parsley, and a scattering of capers if using. This is excellent over steamed rice or with crusty bread to mop up the garlic-herb juices.
Pro Tips
- ✓
Tilapia is a delicate fish — 12–15 minutes at 400°F is all it needs. Check at 12 minutes for thinner fillets. Overcooked tilapia turns dry and falls apart; properly cooked tilapia is tender and flakes in large, moist pieces.
- ✓
Cut thick asparagus spears in half lengthwise so they cook at the same rate as the tilapia. Very thin asparagus is fine as-is; very thick asparagus should get a 5-minute head start before adding the fish.
- ✓
For maximum flavor, marinate the tilapia in the herb-olive oil mixture for 30 minutes before baking. The acid in the lemon zest gently tenderizes the fish while the garlic and herbs permeate throughout.
Frequently Asked Questions
Can I substitute another fish for tilapia in this recipe?
Yes — any thin, mild white fish works beautifully: cod, haddock, mahi-mahi, or sole. Adjust cooking time based on thickness: thin fillets (under 1/2 inch) take 10–12 minutes; thick fillets (over 1 inch) may need 18–20 minutes. Check for doneness by pressing gently — the flesh should flake easily.
What other vegetables can I use instead of asparagus?
Green beans, broccolini, thinly sliced zucchini, cherry tomatoes, or snap peas all roast in the same time frame as tilapia. Broccoli florets work but cut them small — large pieces may need an extra 5 minutes before adding the fish. Sliced bell peppers are also excellent and add a sweet contrast to the mild fish.
Is tilapia healthy to eat regularly?
Yes — tilapia is a lean, high-protein fish (23g protein per 4 oz serving) with low fat and fewer calories than most other proteins. It's one of the most farmed fish in the world, so look for responsibly farmed tilapia labeled with certifications like BAP or ASC. Tilapia from the US, Canada, and the Netherlands meets the highest standards.
