Black Bean Tacos
Crispy, flavour-packed tacos — no meat needed and ready in 20 minutes flat.
Ingredients
Serves 4
- 2 cans (15 oz each) black beans, drained and rinsed
- 8 small corn or flour tortillas
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 tsp salt
- Juice of 1 lime
- 1/2 cup fresh salsa or pico de gallo
- 1 cup shredded purple cabbage
- 1 avocado, sliced
- Fresh cilantro and sour cream or vegan crema to serve
Instructions
- 1Heat olive oil in a medium skillet over medium heat. Add garlic and cook for 60 seconds until fragrant.
- 2Add the drained black beans, cumin, smoked paprika, chili powder, and salt. Stir to coat and cook for 3–4 minutes, stirring occasionally, until heated through and the spices are fragrant.
- 3Add a splash of water (2–3 tbsp) to the beans and use the back of a fork to lightly mash about one-third of them. This creates a mixture that's part whole beans, part thick paste — it clings to the tortilla beautifully.
- 4Squeeze lime juice over the beans and stir. Taste and adjust seasoning — add more cumin for earthiness or chili for heat. Remove from heat.
- 5Warm the tortillas directly over a gas flame for 15–20 seconds per side until slightly charred, or in a dry skillet over high heat.
- 6Assemble the tacos: lay a spoonful of the bean filling on each tortilla, then top with shredded cabbage, avocado, salsa, and cilantro.
- 7Serve immediately with sour cream or vegan crema on the side and extra lime wedges for squeezing.
Pro Tips
- ✓
Rinse the canned beans well to remove excess sodium and the canning liquid — the beans taste cleaner and won't water down your filling.
- ✓
Mashing a third of the beans is the secret to a filling that stays in the taco instead of spilling out. All whole beans roll everywhere; all mashed is too paste-like.
- ✓
For extra flavour, toast the cumin and smoked paprika in the dry pan for 30 seconds before adding oil and garlic — heat releases the essential oils in ground spices and deepens the overall taste.
Frequently Asked Questions
Can I make black bean tacos vegan?
Yes — black bean tacos are naturally vegan as long as you skip the sour cream. Use vegan crema (cashew-based or coconut-based) or a dollop of guacamole instead. All other components — beans, tortillas, cabbage, salsa, avocado, cilantro, and lime — are plant-based.
How do I keep the filling from falling out of my tacos?
Lightly mash about a third of the beans so the filling becomes thick enough to stick. Also, double up your corn tortillas — two small corn tortillas per taco is the traditional Mexican approach, and it prevents splitting while adding flavor. Pile ingredients in the center rather than spread edge to edge.
Can I meal prep black bean tacos ahead of time?
Prep the bean filling up to 4 days ahead and store in the fridge. Reheat in a skillet with a splash of water for 2–3 minutes. Keep all the toppings (cabbage, avocado, salsa) separate and assemble just before eating — avocado browns quickly once cut.
